I grew up in a traditional Mexican family. Chilaquiles was a predominant breakfast meal in our household. I actually regret not paying attention to my mom when she was cooking it. Luckily, I was able to find a recipe that reminded me so much of my mom’s chilaquiles. I am sharing Mama Latina Tips Chilaquiles and Eggs with Guajillo Sauce recipe below.

What are chilaquiles?

Traditionally, it's made of fried tortilla strips/ chips bathed in a delicious season tomato sauce with a fried/scrambled egg and sprinkled with queso fresco. If that alone doesn’t make you mouth water, check out the picture below. I like to add avocado and of course, some salsa. The salsa we love is Cielito Mio Authentic salsa.
